    Ghee comes from the Sanskrit word 'Oil'. It's not very elaborate. In the west it is known as Clarrified Butter. The beauty of Ghee is that once you make it..it keeps for a very long time. Unlike other oils, it will not go rancid. Pretty amazing huh? You make it and leave it out or refrigerate it and it will keep either way. I am not suggesting you test this assertion out, do so if you like...the point is that it can keep very very long.
